So what's the point of these?

Different challenges that you complete in the game, makes it kinda interesting. You can look them up on your control panel to see what ones you've unlocked and what the challenges are to complete the rest. I got a bunch the other night playing Monopoly, like most times thrown in jail, and most times paying income tax (yeah I was a little pissed at that game.)
Think of it more like Easter eggs, if your goal is just to play and beat the game then no, it serves no purpose for your playing style. For guys like me who want to explore everything that the developers put into the game, it adds a little more fun to it. There's rewards that come with them too, unlocking weapons and armor and such that are coupled with those challenges is always a plus.
Some of them are inconsequential, like "running over 300 innocent civilians" in GTA, but some of them are tagged to hidden challenges. If you go to IGN.com, you can find out about unlockable content for a game your playing, but in this case it's the unlocked item you'd be more concerned with than the trophy. I have friends that compare trophies collected as a measure of how well you play the game, maybe not the best way but they take it into consideration. Just another strange thing for people to collect I guess.
Some are just fun to try and get. Like the Dastardly trophy in Red Dead Redemption. You get this one for hogtying a woman and throwing her on the train tracks to await her fate.
